Cabbage patch kids

When I was small I hated cabbage. Really hated cabbage. The look of it, the smell, the taste, I was sworn off cabbage for life. Until the veg man at the farmers market gave me a small red cabbage (echoes of the leeks here I know, but free is my favourite price!) Anyway, I made Delias recipe for braised red cabbage, and I’ve been enjoying it ever since. I love it with mash for some great comfort food. I make it in the slow cooker, and the smells fill the house which is all just fabulous. I sometimes do red cabbage coleslaw as well, which works really well.

Last week I decided to do something different with the red cabbage. Not radically different you understand, but a litle different. I still wanted the whole slow cooked thing, but without the vinegar and spices. I wanted something smoother, something gentler. So i decided to try it with red wine and rosemary.

I sliced and softened an onion in butter, added a shredded cabbage, and a peeled, chopped apple. Then I sloshed in about 1/3 bottle of red wine, and a couple of sprigs o0f rosemary, and plenty of seasoning.

Then I just left it on a very low heat for a couple of hours. The smells were amazing, and it tasted pretty damned good too. One I’ll definintely be doing again!
